  • 8 ozs Baby Bella mushrooms
  • 5 ozs Goat cheese or chèvre
  • 1 oz Cream cheese
  • 1 tbsp Parsley
  • 1 tbsp Scallions
  • 2 tbsps Olive Oil
  • 2 tbsps Bread Crumbs (optional)
Directions

Preheat oven to bake at 400f.

Start by cleaning and destemming mushrooms. Pat dry with paper towel.

Whip the goat cheese and cream cheese together.

Chop herbs and scallions, thoroughly mix into whipped cheese. 

Fill mushroom caps with herbed cheese. Top cheese with breadcrumbs (optional)

Lightly oil baking sheet. Place filled mushroom caps faced down on sheet.

Bake for 10-15 minutes, depending on mushroom size.  Enjoy!

Tips: Substitute in your favorite herbs or add crushed red peppers for a little heat!
